Shabu-shabu is a Japanese nabemono hotpot dish of thinly sliced meat and vegetables boiled in water and served with dipping sauces. The term is onomatopoeic, derived from the sound – "swish swish" – emitted when the ingredients are stirred in the cooking pot
We use the chuck/Denver/Flank. These are all from the Fore quarter of the cow, highly marbled and extremely tender. It has a well-balanced flavor profile with equal parts beefiness, Wagyu sweetness and umami goodness. It's an experience all on its own
